Makes about 2/3 cup

  • 1 teaspoon finely minced fresh ginger
  • 1/2 teaspoon finely grated lime zest
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon Dijon mustard
  • 2 tablespoons fresh lime juice
  • 1 tablespoon rice wine vinegar
  • 1/2 cup grapeseed oil or other neutral-flavored oil
  • salt and pepper to taste

Whisk the ginger, lime zest, garlic, mustard, lime juice and vinegar together with a pinch of salt until creamy. Then slowly whisk in the oil, a few drops at a time, to create an emulsion. Adjust seasoning to taste.

    nscogin says: I love this. I have made it a couple of times. It's especially good as a cole slaw dressing. I just grate some cabbage and carrots and toss with the dressing. It's always a hit!
