This smoothie helps you start off your day in a healthy and delicious way. It is creamy as a milkshake, but vegan and gluten-free, and packs a wallop of protein. It features two servings of fruit, fresh herbs, and protein. Plus you can add as much -- or as little -- sweetener as you please.
If you can't find lemon verbena, try fresh basil. You can also substitute frozen peaches and strawberries for the fresh fruit. If you do so, omit the ice. This smoothie can be sweetened to taste with agave.
Serves 4
Puree the tofu, herbs, strawberries, peaches and ice in a blender until smooth. Sweeten to taste and serve cold.
