This recipe was entered in the contest for Your Best Recipe with Tomato and Basil.


I learned this recipe from a young Italian woman who I worked with one summer. It is very simple, but it is always a hit at parties and barbecues.

Serves 8

  • 4 beefsteak tomatoes
  • 1 handful basil
  • 4 cloves of minced garlic
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 baguette
  1. chop tomatoes into a 1/4 inch dice
  2. shred the basil with your hands
  3. combine the tomatoes, basil, and garlic in a bowl
  4. drizzle the olive oil and balsamic vinegar over the top
  5. sprinkle with salt and pepper
  6. fold all of the ingredients together
  7. cut the baguette into 4 even sized pieces and then slice them open lengthwise
  8. place the pieces of bread on a cookie sheet and brush with olive oil
  9. put the bread in a 350 degree oven until slightly crispy about 5 minutes
  10. spoon the tomato basil mixture on top of the bread and serve
